This delicious, sweet treat is a lot of fun to make and stands out amidst the (still scrumptious) berry-based jams that will be made this summer. Whether you want to put your finished product on Pinterest or make good use of the jam jars in your cupboard, this recipe is for you.

Recipe Ingredients

  • 500g Whole Dried Apricot
  • 1 ½ kg Jam Sugar
  • Juice 3 Large Lemons

Recipe Equipment

  • Jam jars
  • Large saucepan
  • 1 Plate
  • Wooden spoon
  • Wooden board
  • Baking parchment

HOW TO MAKE DRIED APRICOT JAM

  1. Finely chop the whole dried apricot
  2. Add the pieces to a large saucepan
  3. Add 1.5 litres of water to the saucepan
  4. Cover the saucepan before letting it soak overnight
  5. In the morning, put a small plate in the fridge
  6. Place the apricots and water on the hob
  7. Add lemon juice before bringing to the boil
  8. Reduce heat and simmer for 30 minutes
  9. Once the apricots begin to break up, remove from heat
  10. Add the sugar and stir continuously until it dissolves
  11. Return to the heat and boil rapidly for 20 minutes
  12. Remove the plate from the fridge
  13. Place some jam on the plate and run your finger through it
  14. If the jam begins to wrinkle, it has reached the setting point
  15. Slowly pour the jam into hot sterilised jars
  16. Top with baking parchment and seal with a lid
  17. Leave it to cool down and set properly
  18. Store in a cool, dark place
Apricots are in season in summer, but this dried apricot jam can be made all-year round! Plus, you can store your ready-made jam jars containing your home-made delights for up to 6 months, so you can prepare for any occasion ahead of time.
