  1. Wash your gooseberries
  2. Sterilise your jars by washing in soapy water before drying them
  3. Remove the ends of the gooseberry
  4. Place them into a large saucepan
  5. Add 400ml of water to the saucepan
  6. Add the lemon or lime juice, if preferable
  7. Bring to the boil, simmer for 10-15 minutes until the fruit is soft
  8. Put a couple of small saucers in the freezer so the setting can later be tested
  9. Add sugar and stir on a low heat for around 10 minutes
  10. Do not allow the sugar to boil
  11. Make sure the sugar has dissolved completely
  12. Bring to the boil and stir intermittently until you see a pink/red syrupy consistency
  13. Spoon the jam onto one of the chilled plates
  14. If it wrinkles up when you run your finger through it, it is ready
  15. If it doesn’t wrinkle, boil for a further 5 minutes
  16. Keep testing and boiling until you see it wrinkle up
  17. Place the jam into the sterilised jars and seal them
  18. Store in a cool dark place or enjoy immediately
