January and February is the season for Marmalade Making. It's hard to beat the heady citrus smells - it is quite intense as the Seville oranges are only around for a short time. That urgency to get it made before the fruit finishes is part of the appeal. The pleasure it gives throughout the year is worth the effort and once you have made it you will never want to eat shop-bought again!
