Pepper - where would we be without this most fundamental of all of the spices, warm and well, peppery? We add it to almost every dish cooked, every meal eaten, and every chutney and relish preserved.

Cinnamon quills - or sticks - lovely broken and included in spice bags for lovely pungent chutneys.

Not to be confused with mixed spice. Allspice is the fabulous spice essential to those full bodied, warm chutneys. Slightly bruise (by bashing!) before adding to the spice bag for the distinctive pungent flavour to be released.
