do you do 8oz jam jars

We have an 8oz hexagonal jar - the round 8oz are currently not in production

Are these Jam jars that can be used over and over again or are they one use? And do you need to use those rubber ring things around the top under the lid to keep it air tight?

yes most certainly they can be reused repeatedly. The lids can be reused as well two or three times, and they don't need anything additional to make the seal. They are acid proof so are suitable for preserves containing vinegar.
